This recipe honors our contributors from Latin America; the vanilla plant is native to this region along with its even more popular companion, chocolate. The honey utilized in this recipe comes from stingless bees that were originally kept by the Maya, and even today it is Yucatec Maya farmers who provide the raw materials and keep this tradition alive. The rabbit is a central figure in Mexican mythology; Aztecs claimed to see its image in the Moon, along with a group of four hundred rabbit gods who are associated with fertility and festivities.
